This week, the sun was blazing as if we were deep into spring and everyone was playing hooky. Shhhh. I'm sure you didn't need to hear it from me because everyone was outside EVERYWHERE. It was glorious!
Lucky for me,
I had a pal in the same frame of mind so we dashed downtown for lunch. One dining destination was closed...tsk tsk...but that led us to a great discovery!
City Market Sushi serves it up fresh, bento-box style at a price that felt lunchtime-friendly.
Here is a DIY recipe for one of my favorite dishes at City Market Sushi, the delicious
Salmon Poke.
AND tips on selecting your base ingredient...some fine looking fish.
There are plenty of fish in the sea (har har), but let's pick the best of the best!
This is, after all, the Raleigh EDIT.
Tip #1 Look for salmon with plump, clear eyes, moist + shiny skin, and firm flesh (bounces back easily if pressed)
Tip #2 Ask for "Sushi-Grade" which can be consumed raw because it is flash-frozen to kill parasites before it gets to your grocery store or visit a fish monger like my fellas at Earps Seafood, downtown
Tip #3 Look for WILD salmon...which gets its reddish hue from the carotenoids in underwater plants and algae. Farmed salmon get a boost of color from pigment added to their feed.
Tip #4 Trust your sniffer! Fresh smelling fish ONLY...fishy smelling salmon is a "no go!"
NOW...let's get to work with a few extra ingredients and follow this recipe brought to us by the folks at www.chowhound.com.
INGREDIENTS
1 lb salmon, diced into 1/2" cubes
1/4 c soy sauce
1 Tb sesame oil
1 Tb rice wine vinegar
1 tsp ginger, grated
1/2 tsp garlic, minced
3 green onions, white parts thinly sliced
INSTRUCTIONS
Combine all ingredients together in a bowl. Toss to coat well. Cover tightly and chill for at least 1 hour. Serve cold.
To make a rice bowl, layer marinated salmon over cooked rice, shaved cucumber, slivers of radish, avocado wedges, and shredded carrots.
